As Innkeepers, one of our greatest joys is gathering around the table with our guests. Over the years, we’ve received numerous requests for the recipes behind our breakfasts, side dishes, and kitchen surprises. So, we thought it was time to share them with you here.

Each recipe comes straight from our kitchen at The Inns at 8th & Main — sometimes classic, sometimes a little quirky, but always made with love and a touch of small-town charm. Whether you’ve stayed with us before or are just popping by online, we hope these recipes bring a bit of our hospitality into your home.

And what better way to kick things off than with one of our seasonal favorites — Apple Slaw. Crisp, fresh, and just sweet enough, it’s become a go-to dish in our kitchen and a perfect nod to fall in McConnelsville.

Three vintage bowls filled with fresh Apple Slaw from the Inns at 8th and Main.

Apple Slaw from The Kitchen at The Inns at 8th and Main

Ingredients:

  • 3 medium apples, cored and thinly sliced (Honeycrisp, Gala, or Fuji work beautifully)

  • 1 medium carrot, shredded

  • 1/2 squeeze of lemon

  • ⅓ cup raisins

  • ¼ cup crushed pecans (or walnuts)

  • 2 Tbsp sunflower seeds (optional)

  • 2 Tbsp pumpkin seeds (optional)

Dressing:

  • ¼ cup apple cider vinegar

  • 2 Tbsp olive oil

  • 1 Tbsp honey or maple syrup

  • 1 tsp Dijon mustard

  • Pinch of cinnamon (optional, for a fall twist)

  • Salt & pepper to taste

Directions:

  1. In a large bowl, toss together the apples, carrot, raisins, nuts, and seeds.

  2. In a small jar or bowl, whisk together the vinegar, olive oil, honey, Dijon mustard, cinnamon, salt, and pepper until smooth.

  3. Pour the dressing over the apple mixture and stir gently to coat.

  4. Refrigerate for 15–20 minutes to let the flavors blend.

  5. Serve chilled as a refreshing fall breakfast or dinner side dish.

Innkeeper’s Tip

This apple slaw is a fresh balance to a savory breakfast. We love serving it alongside dishes like a cheesy breakfast casserole, quiche, or even Dan’s almost-world famous scrambled eggs and sausage. The crunch and sweetness make the perfect contrast to hearty morning flavors.
