How we make sure every guest's meal is comfy, caring, and creative, and where hospitality meets real-life dietary needs.
One of the most meaningful compliments we receive at The Inns at 8th & Main is: “I’ve never felt so seen at breakfast.” Lately, we have been hearing that a lot.
Food is an emotional experience. It’s connection, comfort, and often—especially at a bed and breakfast—one of the highlights of the stay. But for many travelers, dietary restrictions make dining stressful rather than joyful.
As someone who lives with dairy and gluten intolerances—and follows a glucose-balanced way of eating to manage inflammation, energy levels, and overall wellness—I understand that deeply. My own intolerances show up as inflammation, sinus congestion, and even lung irritation, so navigating food carefully isn’t optional—it’s essential.
Because of that, we built a system that starts before you ever walk through our door.
We ask about your dietary needs when you make your reservation. This gives us time to plan, shop, and prepare intentionally—so your breakfast feels like it was made just for you (because it is).
At The Inns at 8th & Main, we don’t see “special diets.”We see people. And we cook for you the way I cook for myself.

Our Philosophy: Hospitality With Heart (and Without the Ingredients That Harm You)
We accommodate a wide range of dietary needs, including:
Gluten intolerance & celiac
Dairy-free
Glucose-conscious eating
Vegan & vegetarian
Nut allergies
Egg-free
Pork-free
Soy-free
Low sugar or low carb
Medical dietary restrictions
When you share your needs during booking, Dan and I build a breakfast plan around you—not the other way around.
Cross-contact prevention, ingredient swaps, made-from-scratch recipes, and thoughtful plating all ensure that your meal is both safe and exceptional.
Our goal is simple:
Make breakfast the easiest—and happiest—part of your stay.
What a Dietary-Accommodating Stay Looks Like
1. We ask about your dietary needs when you book
This allows us to prepare thoughtfully and personally.
2. We customize your breakfast—every single day
Whether you’re gluten-free, dairy-free, glucose-conscious, vegan, or juggling several
needs at once, we plan ahead so nothing feels last-minute.
3. We prepare your meal safely
Separate prep tools, cookware, and plating for food allergies or celiac.
4. We adjust in real time
If you wake up craving something lighter—or heavier—we’ll pivot with pleasure.

Because I Live It, I Get It
Following a glucose-conscious eating style and managing dairy and gluten intolerances has changed how I eat—and how I care for guests.
It taught me:
That thoughtful substitutes can be delicious
That inflammation is often triggered by small things—invisible to others
That food can be joyful and supportive of wellness
That everyone deserves a breakfast that feels good in their body
If it matters to your health, it matters to us.
